What many people don’t realize is that in Japan, teriyaki isn’t fancy or restaurant-only.
It’s something we make at home all the time—quickly, easily, and without spending much at all.
The flavor is lighter, more balanced, and honestly far more comforting than the sugary versions often found overseas.

Recipe

Ingredients (1 Serving)
  • Chicken thigh or breast1 piece
  • Sake1 tbsp
  • Mirin1 tbsp (If you don’t have mirin, increase sugar to 1.5 tsp)
  • Sugar1 tsp
  • Soy sauce2 tbsp
Instructions

1. Trim the chicken (optional).
You can cook it as is, but if you prefer less fat, feel free to trim off any excess.

2. Sear the skin side.
Heat a pan and place the chicken skin-side down. Cover with a lid and cook until the skin becomes nicely golden.

3. Cook the other side.
Flip the chicken and cook the second side until both sides are fully done.

4. Add the seasonings.
Add sake, mirin, sugar, and then soy sauce, in that order. Swirl the pan gently so the sauce coats the chicken evenly.
When the sauce turns glossy and slightly thickened, turn off the heat.

5. Finish with sauce.
Remove the chicken and slice it into your preferred size.
Spoon the remaining sauce from the pan over the chicken, and it’s ready to serve.
