There is a home-style Japanese dish that once surprised my American friend—Golden Pork Cutlets.
My mother served them during his visit, and he loved them so much that he accidentally ate the entire portion meant for our family!

These tender slices of pork fillet are lightly seasoned, coated in flour, and dipped in egg before being gently pan-fried to a soft, warm golden finish.
It’s a comforting dish with a delicate texture and a beautiful color that feels nostalgic every time.

One thing people often find interesting is how different this is from tonkatsu.
Tonkatsu uses breadcrumbs and requires deep-frying in plenty of oil, but Golden Pork Cutlets use only an egg coating and a very small amount of oil.
This makes them lighter, healthier, and much easier to clean up afterward, yet still satisfying and full of flavor.

In Japan, this isn’t restaurant fare—it’s a cozy home-style dish, something a parent might make on a busy evening or when a gentle, warm meal is needed.

Recipe

Ingredients (2 servings)
  • Pork fillet200g (sliced 5mm–1cm thick, or butterflied open)
  • Salt A pinch
  • Black pepperA pinch
  • All-purpose flour2 tbsp
  • Egg1 (Photo shows 2 eggs; recipe uses 1)
  • Vegetable oil1 tbsp
Instructions

1.Prepare the pork
Slice into 5mm–1cm pieces, or butterfly open for larger portions. Season both sides with salt and pepper.

2.Coat with flour
Place the pork and flour in a plastic bag .
Shake well to evenly coat the surface.

3.Dip in beaten eggs
Place pork into the beaten eggs, ensuring both sides are fully coated with the egg mixture.

4.Pan-fry
Heat oil in a frying pan over medium heat. Add the pork and cook until both sides turn golden and the meat is fully cooked through.

5.Serve
When the surface becomes softly golden and fragrant, it’s ready to serve. A warm, comforting dish perfect with rice.

Note: You can make this dish with chicken (thigh or breast) using the exact same method. It turns out beautifully.
